As far as pouring the cream off.... it's sort of hard to do in the states, as it is very difficult to get non-homogenized milk. I don't know if you can get non-homogenized milk in Oxford. I wouldn't bother, though, as you can get much the same effect as using skim or low-fat milk instead of whole milk or cream.
